In the late 1990s, Paolo Ghiddi, grandson of the founder Giuseppe, began converting his own productions, approaching more and more the biological philosophy.
In 1994, he obtained the organic certification for his products, a milestone that made the agricultural company one of the few realities in the Castelvetro di Modena area certified for organic production.
The desire to avoid the use of chemical substances in their wines allows for the preservation of the organoleptic characteristics of the grapes used, providing their consumers with only high-quality products.
All of our products are cultivated using organic and biodynamic practices, which are monitored and certified by the Ethical and Environmental Certification Institute.
The wheat that we cultivate in this season is the BOLERO, which is ideal for baking bread, traditional cakes such as crostate, ciambelle, biscuits, and fresh pasta dough.
The artichokes are the MORETTO DI BRISIGHELLA variety or the carciofo dei calanchi, and are therefore extremely rustic, small-sized and have strong thorns even in the leaves. They are purple in color and have a fresh and appetizing flavor with unique aromas. The harvesting period is from mid-May to early June.
They can be eaten raw or slightly boiled, and are fantastic when preserved in oil. They are also excellent in all types of salads, whether vegetarian or with meat or fish.
Spelt, which is the ancestor of wheat, prefers hilly terrain and is a rustic cereal with excellent nutritional qualities: rich in fiber, proteins, iron, and selenium and low in gluten.
Spelt is ideal for soups, as a stuffing for vegetables, and also served cold in salads. It can also be used for baking bread.

The San Polo agriturismo is a must-visit place, located amidst the vineyards and truly enchanting! The food is exquisite and produced by them, such as the cappone tortellini in broth! The tigelle with cold cuts and their ricotta were fantastic. The dinner concluded with fantastic desserts, including the panna cotta with balsamic vinegar. Overall, it was a unique experience.
